Chef Dante Romandia with Cafe Bernardo in Davis is making pan roasted chicken breast with Paul Robins.
Recipe:
Chicken Brine – 1/2 gallon cold water, 1/2 cup kosher salt, 1/4 cup sugar, 4 thyme sprigs and 2 cloves of garlic crushed.
Combine all ingredients and marinade chicken brest for 2 hours
For succotash:
1 zucchini
1 Goldbar Squash (yellow zucchini)
1 ear of yellow corn
8 cherry tomatoes, halved
Paprika oil:
1 tsp paprika
1/3 cup olive oil
Combine and heat oil over low flame til oil is slightly warm, set aside and allow to steep for 15 min
