After posting on healthy fare with these delicious carrot muffins, I’ve decided to take a walk on the dark and delectable side with a fun take on S’mores. If you can’t wait for the summer campouts and fire pits, you must try this easy-to-make take on the campfire classic. Instead of chocolate and marshmallow surrounded by graham cracker, we add brownie mix and flip the ingredients inside out to create delicious S’mores Bars. Yum!
Instructions are simple. First you start with your favorite family-sized brownie mix, prepare according to instructions and pour half into a greased 9” x 13” pan. Then you cover the brownie mix with graham crackers and mini marshmallows. Finally, you drizzle on the rest of the mix over the graham crackers and marshmallows to completely cover the top. This is the trickiest step as the marshmallows tend to stick to your spatula. Expect to use several utensils or fingers.
Inside Out S’Mores Bars

Serving Size: 20 bars
Ingredients
1 box family-sized fudge brownie mix (for 9”x13" pan)
Eggs, oil and water called for on brownie mix box (note: I usually substitute in half applesauce for half the oil)
7 sheets honey graham crackers
2 cups mini marshmallows
Nonstick cooking spray
Directions
Preheat oven to 350°F. Coat a 9”x13” pan with nonstick cooking spray.
Prepare brownies according to package directions with eggs, oil, and water. Pour half of brownie mixture into pan. Top with sheets of graham crackers, breaking to fit as necessary. Sprinkle marshmallows on top of graham crackers, covering completely. Drizzle remaining half of brownie batter over marshmallows. Bake for 25-30 minutes, until edges are crisp and center is set. Note: The typical toothpick test won't work for these because of the marshmallow middle, but the top brownies should be solid to the touch, not gooey, when done. Bake for an extra 5 to 10 minutes, if needed for doneness (checking after 5 minutes). Remove from oven and let cool for 15 minutes to set completely. Slice into bars and serve.
