Barkies are one of my family’s favorite Christmas cookies. In fact, according to my mother, Sharon, we have been making them every year for 40+ years. Part of the reason we only make these at Christmastime is that almond bark is very difficult to find in many places except during the holidays. So if you are going to give them a try, you might want to do so soon!
Barkies look like little snowballs, taste a bit like a Butterfinger (some say), and best of all they only have 5 ingredients and do not require an oven. You love them already, right? I hope you will.
Barkies
Ingredients:
- 1 c. white sugar
- 1 c. white syrup
- 2 c. chunky peanut butter
- 4 c. corn flakes
- 1 pkg (24 oz.) Almond Bark (or Vanilla Candiquik)
Directions:
Bring sugar and syrup to a boil. Remove from heat. Stir in peanut butter and cornflakes until well coated. When mixture is cool enough to handle, shape into balls (about the size of a ping pong ball).
Melt the almond bark per package directions. (Make sure you follow the directions exactly and don’t try to rush the melting process because it will scorch easily. This is the hardest part of the entire recipe.) Dip each ball into melted almond bark to entirely coat and place on parchment paper until the bark hardens.
That’s it! Pretty simple right?
These Barkies package nicely for gifts and freeze very well so you can make them ahead of time and have them on hand for when company comes over during the holidays… as long as your family doesn’t know they are in the freezer. We would almost break our teeth trying to sneak and eat frozen ones when we were little. 🙂
