Pizza night at home is one of my favorite nights. It is an event that everyone looks forward to. Watching my kids craft their perfect pie is always fun.
As for me, I try to mix it up every week. This feta pizza is a particular favorite of mine.
I love how the Italian and Mediterranean flavors manage to blend in perfect harmony.

Ingredients
- Pizza Dough: You can buy pizza dough at the grocery store in the freezer section or make your own. If you want to make your own, give my bread machine pizza dough, gluten free pizza dough, or quinoa pizza dough a try.
- Extra Virgin Olive Oil: This golden oil adds a subtle depth of flavor and helps to create that perfect, crispy pizza crust. Avocado oil can also do the trick!
- Medium Tomatoes: If tomatoes aren't in season, sun-dried tomatoes are a fantastic alternative.
- Red Onion: Thinly sliced red onion gives our pizza a sweet, tangy kick. You could also use white or yellow onions for a different flavor profile.
- Garlic Cloves: Sliced thin, these add a wonderful aroma and a punch of flavor. For those who are not fans, feel free to omit.
- Crumbled Feta Cheese: This gives our pizza its signature tangy taste. For our vegan friends, there are many delicious vegan feta options available.
- Kalamata Olives: These dark, rich olives bring a touch of Mediterranean flair to the pizza. Green olives can also work if you prefer a milder flavor.
- Crushed Red Pepper: Feel free to adjust the amount based on your spice tolerance or leave it out entirely.
- Fresh Basil: As the finishing touch, fresh basil leaves add a vibrant taste that elevates the whole dish. Dried basil can be used in a pinch, but fresh is best!
Storing
Store leftover pizza in the refrigerator for up to four days, or freeze in individual slices for up to a month.
Tips and Tricks
- Get Creative with Toppings: While feta, tomatoes, and olives are classic, don't be afraid to add your own twist with additional toppings. Think artichokes, spinach, or even a drizzle of balsamic glaze post-baking for that gourmet touch.
- Preheat Your Baking Surface: Whether you're using a pizza stone, a cast iron skillet, or a baking sheet, make sure it's sizzling hot before you slide your pizza onto it. This ensures a crispy, golden crust that's the hallmark of a great pizza.

- Let It Rest: Once out of the oven, give your pizza a couple of minutes to rest before slicing. This allows the cheese to set slightly, making it easier to cut and ensuring that first bite is just as good as it looks.

Tomato Feta Pizza
Ingredients
- 1 pound gluten free quinoa pizza dough
- 1 tablespoon extra virgin olive oil
- 2 medium tomatoes sliced
- 1 red onion sliced thin
- 6 cloves garlic sliced thin
- ½ cup crumbled feta cheese or vegan feta
- ¼ cup kalamata olive pitted and sliced
- ¼ teaspoon crushed red pepper
- ⅓ cup fresh basil
Instructions
- Place a pizza stone on the bottom rack of your oven. Preheat to 420 degrees.
- Roll out pizza dough on parchment paper. Brush with olive oil and top with tomatoes, onion, garlic, feta, olives and crushed red pepper.
- Using a pizza peel or the back of a sheet pan, carefully transfer crust to pizza stone. Cook for 20 to 25 minutes.
- Top with fresh basil and serve warm.
