‘300 Sandwiches’ blogger is finally engaged

It didn’t take him 300 sandwiches to put a ring on it. It took only 257!

Three years ago, Page Six reporter Stephanie Smith met gadget genius Eric Schulte at a Chelsea restaurant. Schulte teased her about her lack of cooking skills, and asked her to make him a sandwich. She put together a quick turkey-and-Swiss concoction, which he quickly devoured.

And then he spoke the words that changed their lives: “‘Honey, you’re 300 sandwiches away from an engagement ring!’ ”

Smith then created a blog, 300Sandwiches.com, where she posted the recipe and some photos of each sandwich she made.

Last Wednesday, Schulte finally made good on his promise, a few dozen sandwiches early.

It appears No. 257 did the trick — a seasoned mahi mahi steak paired with a tangy mango salsa called The Fishkiller, for her father’s love of fishing.

Schulte and Smith were on a kite-surfing vacation in Barbados with four close friends when he popped the question.

“Unexplainably, 257 stuck out to me as just a really prime number,” he said. “Divisible by none other than itself and 1.”

He created a lavish heart out of red, yellow, pink and white flower petals overlooking the water.

Smith said the proposal was “sweet and poignant,” and their parents were the only people they told until she revealed it on her 300Sandwiches blog, which went viral when she started it two years ago.

What started out as a running joke between Smith and Schulte turned into not only the blog, but a book deal, and now a wedding ring. But Smith said the memories created mean so much more, although she’s happy he listened to Beyoncé and put a ring on it.
