Teriyaki-style Marinade with Cranberry Juice

Ingredients

60 ml (1/4 cup) Patience Fruit & Co 100% pure cranberry juice

60 ml (1/4 cup) canola or olive oil

2 tablespoons soy sauce

1 tablespoon maple syrup  

1 tablespoon freshly grated ginger

2 garlic cloves, pressed

1 sprig fresh thyme or ½ teaspoon dried thyme

1 pinch chili pepper (more if you like)

Preparation time 5 minutes Portions 3/4 cups of marinade

Here’s a simple marinade recipe that will make your favorite meat, fish or vegetable protein taste great. Just mix all the ingredients in a bowl and you’re done!

Steps

  1. Combine all ingredients in a bowl.

  2. Add the protein to be marinated: tofu, chicken, pork, trout, etc. Cover and refrigerate.

  3. Keep marinade to make a sauce: add 1 teaspoon cornstarch and boil mixture for at least 1 minute till it thickens. Boiling will also destroy any harmful bacteria that may be present in the mixture.

Recommendations

Marinating time depends on the protein:

Fish: 30 to 60 minutes

Poultry or pork: 4 to 6 hours

Tofu: 4 to 48 hours
