Gruyere Soufflé - The Perfect Meal For Cool Autumn Evenings

Even though our days are still blustery, before long as our daylight shortens, we will be enjoying cool evenings. 

During this time of year, we start thinking of dishes that are perfect for chilly Autumn nights. For me, one of those favorites is a Gruyere soufflé.

When most people think of souffle, they think elegance, and, difficulty in preparation. While a souffle is indeed elegant, they are quite easy to make.

Below is an easy recipe to make a fall time favorite. Paired with the wine of your choice, Chardonnay for me, and you'll be in for a real treat.

Ingredients:
  • 1 cup fresh milk
  • 1/4 cup + 2 Tbsps sifted all-purpose flour
  • 3 Tbsps softened butter
  • 4 egg yolks 
  • salt & pepper to taste
  • pinch nutmeg
  • 3/4 cup grated Gruyere cheese
  • 5 egg whites
  • pinch garlic powder 
  • pinch mustard powder
Directions: 

1. Preheat oven to 400 degrees. Lightly oil souffle' molds

2. Bring milk to a boil; Mix flour and butter to create a paste.

3,  Add flour paste to milk over low heat and with a whisk until base thickens and returns to a boil.

4.  Remove from heat. Add egg yolks, seasoning and cheese. Allow to cool.

5.  Whip eggs with some salt to a soft peak. Stirn 14 of the whites into the paste. Fold in remaining 3/4 of the whites. Place batter in containers and bake for 12 to 15 minutes or until golden brown. 

Serve immediately. .
