Broiled Grapefuit


Ready for a breakfast oldie but goodie? This is one of those oldies that reminds me of my own childhood. This was always served alongside a soft boiled egg in a cup and a piece of toast. Quite the princess! I hadn't had grapefruit this way since I was a kid, I must have paid too much attention it it's much maligned reputation. In spite of it's reputation, this somehow managed it's way onto the table, sans egg in a cup. Guess what, it's just as tasty as it was when I was a kid. The sweetener on top, along with the cinnamon, works magic and turns this somewhat sour citrus into a pop of breakfast fun. Add a marachino cherry on top, and it's certainly kid friendly.

Ingredients:

2 grapefruit
2 tsp sweetener, agave syrup or brown sugar
1 tsp cinnamon
4 marachino cherries (optional)


Directions: Cut grapefruit in half. Use a small, sharp knife to cut around each section, leaving it in the rind. Remove any visible seeds. Sprinkle each half with 1/2 tsp of the sweetener, then 1/4 tsp of the cinnamon. Broil under high heat for about 2 minutes, until the top of the grapefruit is hot, and the sugar or syrup melts into the grapefruit. Remove from the broiler, top with a marachino cherry, and serve.
