Chef Julian Vasquez of the Pilothouse on the Delta King makes his Spring Roll appetizer available on the Dine Downtown menu.

Spring Roll:
1- 7 X 7 wonton wrapper
3 oz. smoked duck
1 oz. oyster mushrooms
1T shredded carrots
1T green onion
1 egg, slightly beaten

Lay out wrapper from corner to corner (diamond shape). Paint a little beaten egg on top corner and two side corners, add all ingredients into the bottom third of wrap, fold both side corners in, fold bottom corner over filling and continue rolling up tight to the top and seal with beaten egg.

Sauce:
2C Huckleberries
1/3 C sugar
2T Champagne Vinegar
C Port Wine

Combine and bring to boil and simmer for 10 minutes.

Side Cucumber Slaw:
1 oz. julienned cucumbers peeled and seeded
1 tsp. each of julienned red bell pepper, yellow bell peppers
1 tsp. sliced green onions
1 tsp. lemon juice
1 tsp. sesame oil
Salt and pepper to taste

Combine all ingredients and mix well.
