- Reviewed in the United States on November 30, 2011When the first Happy Herbivore Cookbook (HHC) came out, I was a fairly new Herbie. I fell in love with the book immediately due to its simple, healthy, and delicious recipes. I tried other cookbooks but they all paled in comparison and each week I'd find myself returning to Lindsay's recipes again and again. I found myself eating and cooking vegan/plant-based about 95% of the time; and some weeks I would look back and realize I had not eaten animal products at all- by complete accident!
I loved HHC but I must say - Everyday Happy Herbivore (EHH) BLOWS it out of the water. From the improved photography to the awesome features, new and old,, the book is equal parts beautiful and functional. Furthermore, despite being a VERY slow cook,I found the recipes coming together super quickly. In fact, I made 4 recipes within the first 12 hours of receiving it! Granted, I had been waiting for the book to arrive before going grocery shopping, but I found I only needed to pick up a handful of items I had run out of in my pantry (e.g. canned beans, diced tomatoes). I also had made three additional recipes prior to receiving the book, thanks to Lindsay providing sneak peeks and they were equally delicious, satisfying, and easy.
Perhaps what I love the most (besides the chocolate cake that you can make in a mug in your microwave in less than 5 minutes. <--Oh YES she did!), is that Lindsay truly LISTENED to the feedback she received from her fans about HHC. We asked for an ingredient-based index, and EHH has it! We asked for less sweet desserts, and they're in EHH! She read and responded to any constructive criticism/feedback she received and truly took it to heart, making this book even more fan-oriented than the last.
I honestly can't find anything wrong with this cookbook. My only criticism of HHC was the recipe overlap (e.g. one of the ingredients in recipe X is actually recipe Y which has another list of ingredients), a feature I have since come to appreciate because the recipes are all so easy that its ok if I need to make another whole one.
Below I've listed some cookbook features from EHH that I hope will be useful to others as they decide whether or not to buy. I see them as pros but will try to be as unbiased as possible in listing them so that others can make an informed, independent decision.
1) An ingredient-based index. This was the feature I am MOST excited about because it is so darn practical! How many times do you find yourself with leftover x but no way to use it? Point made. ;) However, I do think this could have been made even more extensive (sorry Lindsay). For instance, there is no entry for scallions or onions and the types of tofu (silken/mori-nu) are not listed separately.
2) Similar ingredients. Because Lindsay was living on St. Maarten when writing this book, her access to ingredients was limited and dependent on whatever the plane flew in that week/month. As a result, EHH contains many recipes that utilize the same ingredients (e.g. mushrooms, cauliflower, and various types of beans, specifically garbanzo, black, kidney, and pinto). This allows you to stock up on X and use it in at least three unique ways. All of these multi-use ingredients are easy to find and should be accessible to just about anyone, anywhere.
3) A global influence. Get your taste-buds ready to discover a new favorite taste! There is Ethiopian, Indian, Mexican, Chinese, Japanese, Moroccan, Thai, Italian, Ugandan, etc recipes in this book. You get to try new flavor combinations and impress people with fancy sounding recipes that, in reality, are super easy. This means you do need a larger variety of spices, but these can be purchased inexpensively online (amazon, vitacost, penzey's) or from ethnic grocery stores and target. <--just do NOT buy them from the grocery store baking aisle.
4) All the great features from the first cookbook: a glossary of ingredients, explanations for why Lindsay cooks low fat and vegan, measuring conversions, recipes pairing suggestions, chef's notes that include recipe variations and substitutions, etc.
I'd suggest this book to anyone, regardless of their dietary lifestyle. I have had much success cooking for omnivore friends and family from HHC and cannot wait to impress them with new recipes. Lindsay makes eating a plant-based diet accessible and easier than you can imagine. Even if you just want to dabble, this is a great investment. Just remember, you may end up like me, an accidental but oh-so-happy herbivore.

Before Lindsay, I was very much a "pop frozen food in the oven" or "just add water" type of gal. As a result of my work schedule, my boyfriend also did the bulk of the cooking and he has a heavy hand with oil and earth balance - which isn't healthy. I loved the sample recipes I tried on her blog, HappyHerbivore.com so I took the plunge and bought her cookbook. I am so glad I did! Her recipes are simple, quick, affordable and healthy and are soooooo tasty. You can tell that she put a lot of effort into making the cookbook user friendly. Most of the spices called for are dried, which is wonderful, because I hate buying an entire bunch of basil for a recipe that only calls for 2 leaves (however, you can sub fresh herbs if you prefer). She calls for canned beans, which is a huge time and effort saver, though you can sub out fresh cooked beans for most recipes as well. The instructions are clear and geared towards everyday people, rather than professional chefs who are already well versed in cooking terminology. The ingredients are all relatively easy to find and won't cost you a fortune. I can't tell you how many vegan cookbooks expect you to buy truffle oil when it's used for one recipe in the entire book - there's none of that nonsense here. The only ingredients you might have to search for are miso and nutritional yeast, which are available at health food stores or online. I feel so amazing after eating the meals. The last few times I've gone out to eat, I've actually found myself wishing I had stayed home and cooked instead.
So far, I have made the following:
Fruit Crisp - This was so easy to throw together and was one of the healthiest deserts you could possibly make. I made it with organic wild blueberries, and it was fantastic! My boyfriend gave his stamp of approval as well.
Quick Burgers - I was nervous about making veggie burgers from scratch, but it was easy and fun! They were delicious! The only adjustment I might make in the future is to make three patties out of the mixture instead of four, because the only vegan hamburger buns I can find nearby are HUGE. My boyfriend had boca bugers instead, so I still have to get him to try this.
Eggless Salad - The only eggless salad recipe I've ever tried and liked. Egg salad was one of my favorite vegetarian treats, and I missed it after I went vegan. I like to make a batch on Sunday, so that I'm ready for the week. I can get a work week's worth of lunches out of one package of tofu using this recipe (I use Trader Joe's super firm tofu).
Black Bean & Salsa Soup - This is the easiest recipe I've ever made and probably the tastiest as well! I make this at least once a week. My boyfriend is obsessed with it! He raves about it to his friends and family - even though he's a self proclaimed soup hater!
Greens Quiche - I finally know what to do with my wilted, about to expire kale! Be warned, this does not blend easily in a cheap blender. It took a little veggie broth and a lot of patience to get the tofu mixture fully blended, but it was completely worth the effort. The boyfriend and I both loved it. I ask Lindsay about the blending issue, and she recommended a food processor over a blender for this recipe. As soon as I'm able to purchase a food processor, I can tell I will be making this recipe all the time!
Creamy Dijon Pasta - This recipe is ridiculously good - my favorite so far. I make this at least once a week. The sauce is so creamy and delicious. Lindsay has convinced me that dijon mustard is the new earth balance - it makes everything taste better. To use up the other half package of my Mori-Nu tofu, I typically make miso soup the next day (using the instructions on the miso package). This recipe is also very much boyfriend approved!
Butter Bean Cookies - This was the only recipe I didn't love. It was too heavy on the oats for my tastes (I'm not much of an oatmeal person). However, my boyfriend adored these cookies and devoured them! I'll probably make them as a special treat for him in the future.
Ever since I started using this cookbook, my boyfriend gushes about what a wonderful cook I am. The truth is that I'm not good at cooking - Lindsay is! I love it so much that I also bought The Happy Herbivore Cookbook. I will write a review of that book after I've had a chance to sample more of the recipes.

I started a vegetarian diet about 4 months ago. I consider myself lucky to have chosen "Everyday Happy Herbivore" as my first vegetarian cookbook purchase.I have tried about 15 different recipes from it so far...and no word of a lie...they ALL turned out to be delicious and satisfying. The recipes are simple and the flavors complex...who could ask for anything more? I wish I had gotten this book years ago...I feel much more energetic eating vegetarian and I don't feel guilty about eating meat anymore!I LOVE this cookbook! One of my favorite recipes is the "Sweet Potato Dal" soup/stew on page 114. There is NO excuse not to cook from scratch when the recipes are this easy and rewarding!

I first stumble on Lindsay's blog happyherbivore.com because I was looking for ways to cook food without added oil, a few tries of her online recipes got me hooked and I purchased her first cookbook. After using her first cookbook everyday I decided to order her second one and it did not let me down. Ever since I received it I have been extensively using it. Just like her first cookbook it is jam packed full of recipes that are easy and delicious. I don't have a lot of time to cook being a student nor do I have a lot of money, but with these recipes I can whip a healthy and delicious dinner up in 20minutes!
What I love about Lindsay's cooking is that she relies on spices for flavour rather than fat so as long as your pantry is well stocked with spices there really is not a lot of extras you have to buy to make her meals because she uses staples found in most pantries like beans.
I just want to address some comments I have noticed regarding her books. I have noticed some people say these are good books if you live in North America but some of the ingredients are hard to find if you live in the UK. I am from Canada but I study abroad in Scotland and I use her cook books every-single-day in Scotland with no difficulty finding ingredients. It is true sometimes you have to go to health food stores or order ingredients online (like nutritional yeast) but it is not often. Most of the ingredients I can find at Sainsbury's or ASDA. But other than nutrtional yeast-- which I can't find anywhere in stores-- it is the only ingredient thus far I would have to order online. As for other ingredients such as certain beans if I cannot find it, the recipes are so adaptable that you can easily substitute one type of bean for another and it still tastes delicious. Another comment I notice a lot is that "simplicity" of the recipes, which I find to be beneficial. I don't have a lot of time to cook dinner, but I want to cook healthy meals and the fact that these recipes are not daunting encourages me to cook more often.
Another aspect of this cookbook is that there are a lot of pictures and I like cook books with pictures. Also, this book is very organized. The author labels every meal with icons such as ready in <30min, gluten free, soy free etc so if you have a particular dietary need you can know which recipes are suitable for you without having to read the list of ingredients all the time. This is really time saving and makes it super use friendly. I also enjoy that she adds in all the nutritional contents of her food. She breaks down calories, fat etc so again, very user friendly. There are a lot of 2 serving recipes in this book which is great if you are cooking for 1 or 2 either you have no left overs or just enough for lunch the next day which is awesome.
If you love flavourful food but don't want to spend hours in the kitchen making it, then this book is for you!

Es war eigentlich ein Verlegenheitskauf, aber mal einer, den ich nicht bereue. :-) Endlich mal ein amerikanisches Kochbuch mit Fotos und farbiger Aufmachung. Ich habe viele englischsprachige vegane Kochbücher, aber sie finden so gut wie nie in die Nähe des Herds, weil sie mich durch ihre Aufmachung nicht genügend inspirieren.
Ganz anders dieses. Tolle, einfache Rezepte, die schnell zuzubereiten sind. Toll ist auch, dass sich die Zutaten i.d.R. in jedem normal bestückten veganen Haushalt wiederfinden. Also nicht ausschließlich exotisches Zeug. Dass es auch noch fettarmer Rezepte sind, kommt mir sehr entgegen, denn es gibt nicht nur dünne VeganerInnnen. ;-)
Ein wirkliches Kochbuch für jeden Tag.

I'm actually saving money every week with this book. My son loves the granola bars and we make them for a fraction of the cost of the store bought bars. The recipe is easy to adapt to change up the flavours. Plus we save on the packaging and chemical preservatives and that's just one recipe.

I live in a big city and can easily never cook for myself, but I can say that this book got me back in the kitchen. Unlike a lot of cookbooks that say the recipes are fast and simple, these truly are. So thank you!
