Tofu spread is a key ingredient you really need to have in your fridge. There are so many ways to use it, in your lunchtime sandwich or as a yummy snack on crackers.

Our tofu spread is a snap to prepare from just a few simple ingredients. We like it with lots of fresh herbs and garlic and our no-added-sugar cranberries. The quantities here will give you the general idea, but it’s an “eyeball” recipe, so just mix it up your way.

To go with a nice piece of smoked salmon, try lemon zest and dill instead of cumin and parsley.
